After two years with the Arena Football League's Pittsburgh Power, Baker picked up rugby in Daytona Beach before training at Tiger Academy. He was invited to the Residency Program at the Olympic Training Center in 2014 and made his World Rugby Sevens Series debut under Head Coach Mike Friday later that year.

Baker was named to World Rugby's Rookie of the Year shortlist following the 2014-15 campaign, and led the Eagles in tries scored in 2015-16 with 48, good for second-most on the Series. A member of the U.S. team that qualified for the Rio 2016 Olympic Summer Games at the 2015 NACRA Sevens Championships, he was named to the 12-man Team USA squad for Rugby Sevens' Olympic debut and voted 2017's World Rugby Sevens Player of the Year.

During the 2017-18 season, in the first match of the 2018 Hamilton Sevens Tournament, Baker passed Zack Test to become USA's All-Time Leading Try Scorer. The milestone, an incredible achievement, was secured by Baker in only three years with the squad. He then earned his second-consecutive World Rugby Sevens Player of the Year Award in 2018 and helped his squad open the new season with a silver medal at Dubai Sevens 2018.

Baker currently sits second all time in the tries scored list for the HSBC SVNS Series, a journey that has also seen him fly across three Olympic games, following Rio with appearances in Tokyo and Paris.
